Used salted butter because that’s what I always use. May have used a bit more zucchini. Took it to the office and everyone wanted the recipe. Moist and buttery, not too sweet, almost like the sweetness of a sweet cornbread. Yummy!

I used unsweetened coconut so I did the 2/3 cups brown sugar and I did half whole wheat flour and I actually made them as muffins and they came out great! Only took 27 min at 350.

Next time I might use a bit less oil but i love the outside crunch of the coconut.
