These are fantastic! Long time reader, first time commenter. I made these for a party over the weekend and everybody was simply raving! They couldn't believe I made them myself! I've been eating them for breakfast, lunch, and dinner ever since. And, full disclosure, there are more in the oven right now. I ate all of the squash 🙁 so I sauteed some mushrooms and peppers with cumin and paprika. So many possibilities! They reheat in the microwave very well so I'll be taking these to work. Thanks for this recipe!
