Especially in Oregon summertime (except for this week - what is happening?!), there are often too many things and way too little time! Prioritization is hard but key, particularly making sure relaxation and taking care of yourself is in there too! You are a rockstar for all that you've got going on and doing it all so well! As for this recipe, since I don't eat meatballs, I'll just say those potatoes look delicious 🙂
