I have been cooking butter chicken for over 35 years. when cooked low and slow, especially thighs definitely become very tender. Better not to be in a hurry.. I also use Coconut oil and coconut cream as they are both shelf stable and can always be on hand. i drop a table spoon of butter in at the last minute just to kiss it with a bit of butter flavor.

Thats been my experience with this dish. Was taught how to cook it by friends from Fiji.
