I did add some blueberries to mine as I didn’t have enough strawberries. I personally don’t like very sweet stuff so I could have done without the frosting on them.

With normal cinnamon rolls you'd freeze them after cutting them, then let them thaw and rise before baking when you're reading to bake them. With the fruit in here, I'm honestly not sure if that would work very well — it may get really runny and soggy. Perhaps subbing jam for the fresh fruit would help? I wish I had more experience here to give more insight... hopefully it works for you!
