Have you ever had apple butter? It's like that, but with pumpkin. I have used the recipe posted below to make homemade pumpkin butter and find it to be delicious slathered on all manner of baked goods, as well as stirred into Greek yogurt with chopped apples. The possibilities are endless and I suggest you whip up a batch ASAP.
