I love stuffed peppers, I try to do a new recipe every couple of weeks, and I like breakfast for dinner. I've found that using my convection setting reduces cooking time of stuffed peppers, but not so with this recipe. It took twice as long for the eggs to cook. Lesson learned. Keep smiling; keep cooking!

I tried once to fy them in a pepper circule. They came out really good but photos not so much so I didn't share it yet. I will try couple more times to get better shots. Your eggs look amazing and I really love the idea of using half a pepper! I will definitely need to try this recipe.
