Hi Mim. You really can't. You could use a sourdough starter instead, but that would also be a significantly different recipe.

Thanks for sharing. It’s about 15 min total prep time and lots of reward with such a great tasting bread. I’m using bread flour which seems to provide a more stable bread. I’ve experimented with bacon and cheese, dukah topping, coriander and spring onion filling - they all tasted great with this recipe.
