]]> Hi friends! It's been a long while since I've been on here (see my Instagram for why), but with the current corona virus situation I figured now was a great time to round up some recipes to cook while in isolation! I've been practicing social distancing for a few weeks now, and have never been more glad to have a well-stocked pantry.

I chose these recipes with a few things in mind: simple ingredients you're likely to have on hand, few perishable ingredients, somewhat uncomplicated procedure. I generally have potatoes, kale, onions, and garlic on hand, so I've included recipes with those items of produce. COVID-19 is taking a toll on energy and mental bandwidth for a lot of us, so I'm all for keeping things simple for now! I hope you're all staying safe, sane, and isolated!

Haaaay Tuesday! Tuesday that feels like Monday... oof. THAT kind of Tuesday. I hope you all had a lovely Labor Day Weekend! I spent mine in Central Oregon soaking up the sunshine, riding bikes, making/eating incredible food with incredible people, drinking coffee, and climbing up rocks (which has now rendered my arms useless. nbd.)! All in all: super successful weekend! Now it's back to the Portland grind, which means I'm back in the kitchen and ALWAYS looking for new inspiration! We have a great list of goodies today!

TUESDAY TUESDAY! Welcome back! Sorry for the radio-silence yesterday... Hey Teeeews-daaaeeee! Yeah we're being weird this morning. NBD. Portland got hot again! I've somehow planned to bake things ONLY on the hottest days of this summer - clearly planning my life *very* well these days. Oh well! Mostly I'm just soaking up as much summer as I can and enjoying the weather while it lasts! I keep thinking "OMG summer is almost over!" since it's mid-August, but in reality... this awesome weather still has quite a bit of time left. LIVE IT UP! Also, eat all the things. Here we go!

Good morning love-muffins! I hope your week is off to a beautiful start! Today feels like Monday to me, since I got back from the beach yesterday afternoon... but luckily my "Friday" is only two days away. YAY FOR SHORT WEEKS! Not that my work ever really conforms to the normal week schedule. But it still is exciting! Today we have tons of summer goodies on the list - fruity drinks, peanuty salads, delicious breakfasts, veggie burgers - I want to eat them all!

Happy Tuesday! I hope you guys are staying cool wherever you are... I'm trying not to roast my skin off in my 95 degree apartment here in Portland! Did I mention how much I love being back and living here? Hehe. Really though, I've figured out how to keep it cool: open the door to the air-conditioned hallway (the apt itself doesn't have AC). GENIUS! I hope nobody important is reading this. With only a week left in Portland before I head to Europe, I'm in work work socialize socialize mode - sometimes at the same time. Lots to do, but all fun. On Sunday I went to the beach with a friend and was soooo glad to have a little down-time to hike, smell/touch/listen to the ocean, and have a chance of pace. This weekend I'm heading to a different beach with some family - another great weekend in the works!

Happy Tuesday errbody! I hope you had wonderful weekends (and Mondays. We can just pretend Monday didn't happen though, if that's better for you!). Like I said yesterday, I spent the weekend at Indulge Conference here in Portland. I got to meet soooo many beautiful and talented and amazing food bloggers - so many of whom I'd "met" on the internet but finally got to see face-to-face! YAY! Being a blogger sometimes means not having any friends who understand exactly what goes into the job ... so it's nice to make friends that TOTALLY GET YOU. I definitely came away with a bunch of ideas and things to do here on TKP! ALSO: I met NEW people and discovered NEW blogs that'll undoubtedly make it into #droolworthy posts from here on out. YAAAY! {ALSO: Made new bffs/boyfriends.}

I spend the weekend (plus some) in Southern Oregon visiting with family and friends, enjoying small-town carnival rides and the great outdoors! It was a wonderful weekend! Happy Tuesday, everybody! I hope your week is off to a good start. Mine certainly is! After a month of moving/organizing/planning/whatever, I finally feel mostly back to real life - which means my yoga practice went back into the studio (home practice is great, but I love a good class!) and is making ALL THE DIFFERENCE. I'm riding my bike all over this darn town, successfully navigating the emptier streets - and I finally ventured over the river via bike... slowly but surely, I am learning how to do it! I've also been sleeping 10-12 hours per night, which is actually worrisome but I'm just gonna let it happen for as long as my body needs it - no point in fighting it!

This week is a doozy for me - tons to do before taking off for 4+ days surrounding Memorial Day to visit family! Then I'll be back in time to go to Indulge Conference here in Portland next weekend - is anyone going?? I'm so excited to meet some more food bloggers!!
