You don't need to boil the crumbles in water, because they're precooked. Instead, adjust the amount of water to get the consistency you want. The long cooking period is still necessary to obtain the full mingling of flavors. I suppose a vegan would use soy cheese, but it doesn't bother me at all to use soy crumbles and real cheese from a cow.
